  • 1/3 cup Vegetable Oil
  • 1/3 cup Water
  • 2 large Eggs
  • 1/2 cup Unsalted Butter, softened
  • 8 oz Cream Cheese, brick style, softened
  • 2 cups Powdered Sugar, sifted
  • 1 tsp Vanilla Extract
  • Red Food Coloring (Gel preferred)
  • 1 cup White Chocolate Chips or Candy Melts
  • Mini Marshmallows (Optional, for fangs)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a Bundt pan or line a 9×13 pan with parchment paper.
  2. Mix cake mix, oil, water, and eggs according to box instructions. Pour into pan and bake for 25-30 minutes until a toothpick comes out clean.
  3. Let the cake cool completely on a wire rack. This is crucial to prevent the frosting from melting.
  4. Crumble the cooled cake into a large bowl until it resembles fine crumbs (about 3-4 cups).
  5. In a stand mixer, beat softened butter and cream cheese on medium speed until smooth (2-3 minutes).
  6. Add powdered sugar and vanilla extract. Beat on low until combined, then increase to medium-high and beat for 2-3 minutes until fluffy.
  7. Add cake crumbs to the frosting. Start with half and mix, adding more as needed until the mixture holds together like playdough but is not soupy.
  8. Roll the mixture into 1-inch balls using a cookie scoop or hands. Place on a parchment-lined baking sheet.
  9. Chill the balls in the refrigerator for at least 30 minutes or freezer for 15 minutes to firm up.
  10. Melt white chocolate chips or candy melts according to package directions. Thin with a teaspoon of coconut oil if needed.
  11. Dip each chilled ball into the melted chocolate, letting excess drip off. Place back on parchment paper.
  12. While the chocolate is still wet, attach two small pieces of white chocolate or candy melts to the top of each ball to create ‘fangs’.
  13. Let the cake balls set at room temperature or in the fridge until the chocolate is hard (20-30 minutes).

Ensure the cake is completely cool before crumbling to prevent the frosting from becoming runny. If the mixture is too sticky, wet your hands slightly with water before rolling.
