Instructions

  1. Peel sweet potatoes and cut into uniform 2-inch chunks. Place in a large pot, cover with cold water by an inch, add a pinch of salt, and bring to a boil. Reduce to a simmer and cook for 15-20 minutes until tender. Drain well and let sit in a colander for 5 minutes to steam off excess moisture.
  2. Transfer warm potatoes to a large mixing bowl or food processor. Add softened butter, heavy cream, maple syrup, brown sugar, vanilla, salt, cinnamon, and nutmeg. Pulse or mix until smooth but not elastic. Taste and adjust seasoning if needed. Let the mixture cool completely to room temperature.
  3. Transfer the cooled potato mixture to a 9×13 inch baking dish. Smooth the top with a spatula. Cover tightly with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Refrigerate for up to 48 hours.
