easy moist banana bread - featured image

A simple, moist banana bread made in just one bowl with pantry-friendly ingredients. This recipe takes under 15 minutes to prep and delivers a tender, flavorful loaf perfect for breakfast or snacks.

Ingredients

Scale
  • 3 medium ripe bananas
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper, leaving an overhang on the sides.
  2. Peel ripe bananas and mash them in a large mixing bowl until mostly smooth with small lumps.
  3. Add sugar, eggs, vegetable oil, and vanilla extract to the mashed bananas. Whisk vigorously until the mixture is glossy and combined.
  4. Sprinkle flour, baking soda, and salt over the wet mixture. Fold gently with a spatula or wooden spoon until just combined; do not overmix.
  5. Pour batter into the prepared loaf pan and smooth the top. Press in any optional mix-ins like nuts or chocolate chips.
  6. Bake for 55-65 minutes. Check at 50 minutes; if the top is browning too fast, cover loosely with aluminum foil. The bread is done when a toothpick inserted into the center comes out clean or with moist crumbs.
  7. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment paper and cool completely on a wire rack before slicing.

Notes

Ensure bananas are very ripe with brown spots for maximum sweetness and moisture. Do not overmix the batter once flour is added to avoid a tough texture. Room temperature eggs help the emulsion stay smooth. For a vegan version, substitute eggs with flax eggs. For gluten-free, use a 1:1 gluten-free flour blend.
