  • 1 ½ cups rolled oats
  • ½ cup dark chocolate chips

Instructions

  1. Line an 8×8-inch baking dish with parchment paper, leaving an overhang on two sides.
  2. In a microwave-safe bowl, combine 1 cup peanut butter and ½ cup honey. Microwave in 20-second intervals, stirring between each, until smooth and pourable (about 40-60 seconds total).
  3. Stir in 1 teaspoon vanilla extract and ¼ teaspoon salt until glossy.
  4. Add 1 ½ cups rolled oats and 2 tablespoons flaxseed meal (if using). Stir until evenly coated. The mixture should be thick and slightly sticky.
  5. Gently fold in ½ cup dark chocolate chips until just combined.
  6. Transfer the mixture to the lined dish. Use a second piece of parchment paper or lightly wet hands to press the mixture down firmly and evenly. Compact it well using the bottom of a measuring cup.
  7. Refrigerate for at least 30 minutes (or 20 minutes in the freezer) until firm.
  8. Lift the block out using the parchment overhang, place on a cutting board, and cut into 12 bars with a sharp knife.

Notes
