Instructions

  1. In a medium bowl, combine graham cracker crumbs, sugar, and rainbow sprinkles. Pour in the melted butter and stir until the mixture looks like wet sand and holds together when pressed (about 3-5 minutes).
  2. Line an 8×8-inch pan with parchment paper, leaving some overhang for easy removal. Press the crust mixture firmly and evenly into the bottom of the pan. Chill in the fridge for at least 15 minutes to set.
  3. In a large bowl, whip the heavy cream with an electric mixer on medium-high speed until soft peaks form (about 3-4 minutes).
  4. In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy (about 2-3 minutes).
  5. Gently fold the whipped cream into the cream cheese mixture in batches using a spatula, folding slowly to keep the airy texture.
  6. Spread the cheesecake filling evenly over the chilled crust and smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours or overnight for best results.
  7. Once set, use the parchment paper overhang to lift the bars out. Cut into 12 squares with a sharp knife (dip in warm water and wipe clean between cuts for neat edges). Serve chilled.
