  • 1 pound ground beef (80/20)
  • 1 packet (about 1 ounce) taco seasoning
  • ½ cup water
  • 1 (15-ounce) jar queso blanco or nacho cheese sauce
  • 1 cup shredded Mexican blend cheese
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2 large Roma tomatoes, diced and seeded
  • ½ medium red onion, finely diced
  • 2 fresh jalapeños, thinly sliced (seeds and membranes removed for less heat)
  • ½ cup sliced black olives
  • ½ cup fresh cilantro, roughly chopped
  • 2 ripe avocados, diced or sliced
  • ½ cup sour cream or Mexican crema
  • 2 limes, cut into wedges
  • ¼ cup pickled jalapeños (optional)
  • Ranch dressing for drizzling (optional)
  • 1 cup shredded lettuce (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink (about 6-8 minutes). Drain off excess fat. Reduce heat to low, sprinkle taco seasoning over the meat, add ½ cup water, and stir. Simmer for 3-4 minutes until sauce thickens. Set aside.
  3. Prep your toppings: Dice tomatoes, onion, and avocado. Slice jalapeños and olives. Chop cilantro. Cut limes into wedges. Place sour cream in a small ramekin.
  4. Assemble the board base: Arrange tortilla chips in a single, even layer on a large oven-safe platter or baking sheet. Spread cooked taco meat evenly over chips. Sprinkle drained black beans over meat. Drizzle queso blanco or nacho cheese sauce over everything. Finish with shredded Mexican blend cheese on top.
  5. Bake: Place platter in preheated oven and bake for 10-12 minutes, until cheese is fully melted and bubbly and chips are golden at the edges.
  6. Add fresh toppings: Carefully remove hot platter from oven. Immediately sprinkle diced tomatoes, red onion, fresh jalapeños, black olives, and most of the cilantro over the hot chips. Arrange diced avocado and lime wedges around edges. Place ramekin of sour cream in center or on side.
  7. Finish and serve: Drizzle extra sour cream or crema over top if desired. Garnish with remaining cilantro and pickled jalapeños. Serve immediately while cheese is hot and stretchy.
