  • 1 tablespoon (15 ml) water (to mix with cornstarch)
  • Chopped green onions (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Pat 1.5 to 2 pounds of boneless, skinless chicken breasts dry with paper towels.
  2. In a medium bowl, whisk together 1/4 cup honey, 1/4 cup low sodium soy sauce, 4 minced garlic cloves, 2 tablespoons rice vinegar, 1 teaspoon freshly grated ginger, 1 teaspoon sesame oil, and 1/2 cup chicken broth until well combined.
  3. Place the chicken breasts flat in the bottom of the slow cooker in a single layer. Pour the sauce evenly over the chicken, coating each piece.
  4. Cover and cook on low for 3 to 4 hours, or until the chicken reaches an internal temperature of 165°F and is tender enough to shred easily with a fork.
  5. If desired, remove the chicken breasts and set aside. Mix 1 tablespoon cornstarch with 1 tablespoon water to create a slurry. Pour the slow cooker liquid into a saucepan and bring to a simmer over medium heat. Slowly whisk in the slurry and cook until the sauce thickens, about 2-3 minutes.
  6. Return the chicken breasts to the thickened sauce and spoon over the glossy glaze. Garnish with chopped green onions and sesame seeds before serving.

Notes

Patting the chicken dry before cooking helps the sauce stick better and prevents rubbery texture. Cook on low heat to keep chicken juicy and tender. Avoid lifting the lid during cooking to maintain consistent heat. Use fresh garlic and ginger for best flavor. If thickening sauce, do it off the heat to avoid clumping. Chicken thighs can be used as a juicier alternative. For gluten-free, substitute soy sauce with tamari or coconut aminos.
