  • 4 medium red potatoes, quartered
  • 1 cup chicken broth (240 ml)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: splash of apple cider vinegar
  • Optional: pinch of crushed red pepper flakes

Instructions

  1. Pat the pork loin dry with paper towels. Season all sides generously with salt, pepper, and dried thyme.
  2. Heat olive oil in a skillet over medium-high heat. Sear the pork loin for 3-4 minutes on each side until browned. Transfer to the slow cooker.
  3. Place sliced onions, carrots, and quartered potatoes around and under the pork loin in the slow cooker.
  4. Sprinkle minced garlic evenly over the pork and vegetables, then dust the brown sugar on top of the pork loin.
  5. Pour 1 cup of chicken broth into the slow cooker.
  6. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until pork is fork-tender and vegetables are soft but not mushy.
  7. Remove the pork loin and let it rest for 10 minutes before slicing. Serve with the vegetables and cooking liquid.
