Instructions

  1. Grate the zucchini using a fine grater or food processor. Place grated zucchini in a clean kitchen towel and squeeze firmly to remove excess moisture, yielding about 1 cup.
  2. In a large bowl, whisk together rolled oats, all-purpose flour, baking soda, cinnamon, and salt until well combined.
  3. In another bowl, cream the softened butter, brown sugar, and granulated sugar using an electric mixer or whisk until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until smooth and combined.
  5. Slowly add the dry ingredients to the wet ingredients, stirring just until incorporated. Avoid overmixing.
  6. Gently fold in the grated zucchini and chocolate chips until evenly distributed.
  7. Drop rounded spoonfuls of dough onto a parchment-lined baking sheet, spacing about 2 inches apart.
