  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with juices
  • 12 chipotle peppers in adobo, chopped
  • 4 cups chicken broth (preferably low sodium)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried Mexican oregano
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, a handful chopped (for garnish)
  • Tortilla strips or chips (for topping)
  • Optional toppings: shredded cheese, avocado slices, sour cream or Greek yogurt

Instructions

  1. Dice 1 medium onion and mince 3 garlic cloves. Chop 1-2 chipotle peppers in adobo sauce finely.
  2. Place chicken breasts at the bottom of the slow cooker. Add diced onion, minced garlic, chopped chipotle peppers, diced tomatoes with juices, drained black beans, corn kernels, cumin, chili powder, oregano, and chicken broth. Stir gently to combine.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender enough to shred.
  4. Remove chicken breasts and shred using two forks. Return shredded chicken to the slow cooker and stir in.
  5. Taste soup and add salt and pepper as needed. Squeeze fresh lime juice into the pot and stir gently.
  6. Ladle soup into bowls and top with tortilla strips or chips, fresh cilantro, and optional toppings like shredded cheese, avocado, or sour cream/Greek yogurt.

Notes

If soup is too thin, mash a few black beans against the side of the pot and stir to thicken. If too thick, add more broth or water. Let chicken rest a couple minutes before shredding to retain moisture. Add lime juice at the end to preserve brightness. Rinse beans to reduce sodium and starch. Adjust chipotle peppers to control spice level.
