  • 3 cups canned navy beans, drained (about 2 x 15 oz cans)
  • 3 tablespoons unsalted butter
  • ½ cup packed brown sugar
  • ¼ cup pure maple syrup
  • ¼ cup bourbon
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup water or low-sodium chicken broth

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Heat 3 tablespoons of unsalted butter in a medium skillet over medium heat. Add the finely chopped yellow onion and cook until translucent and slightly caramelized, about 7-8 minutes. Add minced garlic and cook for another minute until fragrant.
  3. In a mixing bowl, stir together brown sugar, maple syrup, bourbon, tomato paste, Dijon mustard, apple cider vinegar, Worcestershire sauce, smoked paprika, salt, and black pepper.
  4. Drain and rinse the navy beans. Add the beans and the sautéed onion-garlic mixture to the glaze bowl. Stir gently to coat the beans evenly without breaking them up.
  5. Transfer the mixture into an 8×8 inch oven-safe baking dish. Pour water or chicken broth around the edges to keep the beans moist during baking.
  6. Cover the dish tightly with aluminum foil or a lid. Bake for 50 minutes until beans are tender and glaze is bubbling.
  7. Remove foil carefully, stir gently, then optionally sprinkle extra brown sugar on top for a thicker glaze. Bake uncovered for another 15-20 minutes until glaze thickens and caramelizes.
  8. Let the beans cool for about 10 minutes before serving to allow the glaze to set.

Notes

Rinse canned beans to reduce sodium and starch. Be gentle when stirring beans to avoid breaking them. Use real maple syrup for best flavor. Choose a bourbon you enjoy sipping as its flavor concentrates during baking. Cover beans while baking to keep moist and uncover at the end to caramelize glaze. For a thicker glaze, broil for 2-3 minutes watching carefully. Can be adapted for slow cooker cooking.
