  • ½ cup ranch dressing (homemade or store-bought)
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Black pepper to taste
  • Optional garnish: chopped green onions or fresh parsley

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. If shredding cooked chicken, ensure it is slightly cooled; measure about 2 cups shredded.
  3. In a mixing bowl, combine 8 ounces softened cream cheese with ½ cup ranch dressing and blend until smooth and creamy.
  4. Add ½ cup buffalo sauce and stir gently to combine.
  5. Sprinkle in 1 teaspoon garlic powder, ½ teaspoon onion powder, and black pepper to taste; mix evenly.
  6. Fold in the shredded chicken until coated well in the sauce mixture. If too stiff, add a splash of milk or extra ranch to loosen.
  7. Stir in 1 cup shredded sharp cheddar cheese, reserving about ¼ cup for topping.
  8. Gently fold in ¾ cup blue cheese crumbles, being careful not to overmix.
  9. Spoon the mixture into a greased 8×8-inch baking dish and spread evenly.
  10. Sprinkle the reserved cheddar cheese on top and optionally add a few more blue cheese crumbles for presentation.
  11. Bake for 20-25 minutes until bubbly around the edges and lightly golden on top.
  12. Remove from oven and let cool for 5 minutes. Garnish with chopped green onions or parsley if desired.
  13. Serve warm with celery sticks, tortilla chips, or preferred dippers.

Notes

If dip is too thick after baking, stir gently before serving to restore creaminess. For extra crisp on top, broil for 1-2 minutes watching carefully. Can be made ahead and refrigerated, then baked before serving. Slow cooker method possible by heating on low for 1-2 hours. Dairy-free and low-carb substitutions available.
