A light and vibrant summer spritzer combining homemade peach syrup, bourbon, fresh lemon juice, sparkling water, and fresh mint for a refreshing and easy-to-make cocktail.

  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup bourbon (smooth, slightly sweet like Maker’s Mark)
  • 1/2 cup fresh lemon juice (about 34 lemons)
  • 2 cups sparkling water (plain or flavored)
  • 1012 fresh mint leaves, washed and gently bruised
  • Ice cubes as needed

Instructions

  1. Make the Peach Syrup: In a medium saucepan, combine sliced peaches, sugar, and water. Bring to a gentle simmer over medium heat, stirring occasionally. Simmer for about 15 minutes until peaches soften and sugar dissolves completely, watching closely to prevent burning.
  2. Strain the Syrup: Remove from heat and let cool slightly. Pour mixture through a fine mesh strainer into a bowl or pitcher, pressing peaches gently to extract liquid and flavor. Discard solids or save for another use.
  3. Prepare Lemonade Base: Squeeze fresh lemons to get about 1/2 cup juice. Combine lemon juice with cooled peach syrup and bourbon in a large pitcher.
  4. Add Mint: Gently bruise mint leaves with a muddler or back of a wooden spoon to release aroma without tearing leaves. Add to pitcher and stir lightly.
  5. Chill and Assemble: Refrigerate mixture for at least 30 minutes to allow flavors to meld. When ready, fill glasses halfway with ice and pour spritzer base about two-thirds full.
  6. Add Sparkling Water: Top off each glass with about 2 oz (60 ml) sparkling water. Stir gently to combine without losing fizz.
  7. Garnish and Serve: Garnish each glass with a fresh peach slice and a sprig of mint. Serve immediately for best fizz and freshness.

Notes

Do not rush simmering the peach syrup to avoid burning. Gently bruise mint leaves to prevent bitterness. Add sparkling water just before serving to keep fizz lively. Syrup can be stored up to one week refrigerated. Adjust sweetness and bourbon to taste.
