  • Pinch of salt
  • 1 cup ice cubes (optional for slushier texture)

Instructions

  1. Cut about 4 cups of watermelon into cubes, removing seeds.
  2. Place watermelon cubes into a blender or food processor.
  3. Add 1/4 cup fresh lime juice, 1/2 cup tequila blanco, 1/4 cup simple syrup, optional 2 tablespoons orange liqueur, and a pinch of salt.
  4. Blend until smooth and well combined, about 1 minute. If desired, add 1 cup ice cubes and pulse until crushed but not watery.
  5. Taste and adjust sweetness or lime juice as needed.
  6. Pour mixture into popsicle molds, leaving space at the top for expansion. Insert sticks.
  7. Freeze upright for at least 4-6 hours or overnight until solid.
  8. To unmold, run molds under warm water for a few seconds and gently pull sticks out.
