A vibrant and icy summer drink combining tart fresh lemon juice, sweet blue raspberry syrup, and a splash of vodka for a refreshing boozy treat perfect for hot afternoons and gatherings.

Ingredients

Scale
  • 1 cup (240 ml) fresh lemon juice, freshly squeezed
  • ½ cup (120 ml) blue raspberry syrup (e.g., Torani or Monin)
  • ½ cup (120 ml) simple syrup (homemade or store-bought)
  • 1 cup (240 ml) vodka (or rum/gin as alternative)
  • 3 cups (720 ml) ice cubes, crushed or whole (crushed preferred)
  • ½ cup (120 ml) cold water or club soda (optional, to adjust thickness or add fizz)
  • Lemon slices for garnish
  • Fresh blueberries or raspberries (optional, for extra fruity touch)

Instructions

  1. Make the simple syrup by combining equal parts sugar and water (½ cup each) in a small saucepan. Heat gently, stirring until sugar dissolves completely. Let cool to room temperature.
  2. Squeeze enough lemons to get 1 cup (240 ml) of fresh lemon juice. Strain to remove seeds and pulp for a smooth slushie base.
  3. In a large pitcher, combine the fresh lemon juice, blue raspberry syrup, simple syrup, and vodka. Stir gently to blend flavors evenly.
  4. Crush about 3 cups (720 ml) of ice cubes until small enough to blend smoothly but not watery.
  5. In your blender, add half the ice and half the lemonade mixture. Blend on high for about 30 seconds until slushy. Repeat with the remaining ice and lemonade mixture.
  6. Pour both blended batches into a large pitcher or bowl. Stir gently to mix. If too thick, add a splash of cold water or club soda to loosen slightly. If too thin, blend in a few more ice cubes.
  7. Serve immediately in chilled glasses. Garnish with lemon slices and fresh berries if desired.

Notes

Blend in batches to avoid overheating or watery texture. Use fresh lemon juice for best tartness. Pre-chill ingredients and glasses to keep slushie icy longer. Add soda water just before serving for fizz. For non-alcoholic version, omit vodka and add extra club soda or sparkling water.
