These Quick Fluffy Banana Oat Pancake Cups are perfectly portioned pockets of soft banana sweetness and hearty oats, baked in muffin tins for an easy, healthy breakfast or snack.

  • 1 cup rolled oats (90g), ground into oat flour
  • 2 medium ripe bananas, mashed
  • 2 large eggs, room temperature
  • ½ cup milk (120ml), any kind (dairy or plant-based)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional)
  • Pinch of salt
  • 12 tablespoons maple syrup or honey (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin lightly with butter or oil to prevent sticking.
  2. Place 1 cup of rolled oats into a blender or food processor and pulse until you get a fine, flour-like consistency (about 1–2 minutes).
  3. In a medium bowl, combine the oat flour, baking powder, cinnamon (if using), and salt. Whisk together evenly.
  4. In another bowl, mash the bananas with a fork until smooth but still a little chunky. Add eggs, milk, vanilla extract, and maple syrup or honey if using. Whisk until combined.
  5. Pour the wet ingredients into the dry ingredients and gently fold with a spatula or spoon until no dry flour remains. Do not overmix.
  6. Spoon batter into muffin cups, filling each about ¾ full. Optionally, sprinkle oats or nuts on top.
  7. Bake for 15–18 minutes, starting to check at 14 minutes by inserting a toothpick; it should come out clean or with a few crumbs.
  8. Let the pancake cups rest in the tin for 5 minutes before removing.
  9. Serve warm or at room temperature, optionally with honey, fresh fruit, or yogurt.

Notes

Use ripe bananas with brown spots for best sweetness and moisture. Grease muffin tin well to prevent sticking. Do not overmix batter to keep cups tender. Start checking baking time early to avoid drying out. Batter can be refrigerated up to 2 hours before baking but texture may change.
