These witch finger cookies are a deliciously spooky Halloween treat that tastes as good as it looks. With an almond extract-infused dough and slivered almond ‘nails,’ they’re easy to make and perfect for parties.

  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 ½ cups (312g) all-purpose flour
  • ½ teaspoon salt
  • Green food coloring (gel preferred)
  • Slivered almonds (about 30-36 pieces)
  • Red jam or preserves (optional, for ‘blood’)

Instructions

  1. Cream the butter and sugar. In your large mixing bowl, combine the softened butter and granulated sugar. Use your wooden spoon to mash and stir until the mixture is light, fluffy, and pale in color. This should take about 2-3 minutes of vigorous mixing.
  2. Add the wet ingredients. Crack the egg into the bowl and add both the vanilla and almond extracts. Stir until everything is fully combined. The mixture might look slightly curdled at this point—that’s totally normal. Now add your green food coloring, starting with 4 drops. Stir it in and assess the color. You want a pale, sickly green. Add more drops until you’re happy with the shade.
  3. Mix the dry ingredients. In a separate small bowl, whisk together the flour and salt. Add this dry mixture to the wet ingredients in two batches. Stir gently after each addition until just combined. You don’t want to overmix. Stop as soon as you no longer see streaks of flour.
  4. Shape the fingers. Scoop out about 1 tablespoon of dough and roll it into a log shape about 3 inches long and ¾ inch thick. Place the log on your parchment-lined baking sheet. Use the blunt side of a butter knife to create indentations at the ‘knuckles.’ Press gently but firmly enough to leave a visible crease. You want about 2-3 knuckle marks per finger.
  5. Add the fingernails. Take a slivered almond and press it firmly into the tip of each finger, angled slightly upward. The pointed end of the almond should stick out like a nail. Press it in until it’s secure.
  6. Create the details. Use a toothpick or small knife to add fine lines around the knuckles and cuticles. Make small, gentle strokes to mimic natural skin creases. You can also press the sides of the finger to create a more irregular, organic shape.
  7. Chill the cookies. Place the baking sheet with the shaped fingers in the refrigerator for at least 30 minutes. This step is crucial to prevent spreading.
  8. Preheat and bake. While the cookies chill, preheat your oven to 350°F (175°C). Once the 30 minutes are up, place the baking sheet in the oven and bake for 12-14 minutes. The cookies should be set around the edges but still slightly soft in the center.
  9. Cool completely. Let the cookies sit on the baking sheet for 5 minutes after coming out of the oven. Then transfer them to a wire cooling rack to cool completely. If you’re adding the ‘blood’ detail, wait until the cookies are fully cool. Use a toothpick to dab a tiny amount of red jam at the base of each almond ‘nail.’

Don’t skip the chilling step—it prevents spreading. Keep your hands slightly cool when shaping the dough. Use a light touch with the food coloring; start with a few drops and add more as needed.
