These strawberry shortcake skewers are a fun, portable version of the classic dessert. They combine moist pound cake, sweet macerated strawberries, and fluffy whipped cream on a stick for a mess-free, party-perfect treat.

  • 1 pound (450g) fresh strawberries, hulled and halved
  • 2 tablespoons (30ml) granulated sugar
  • 1 tablespoon (15ml) fresh lemon juice
  • 1/2 cup (120ml) heavy whipping cream, very cold
  • 2 tablespoons (15g) powdered sugar
  • 1/2 teaspoon (2.5ml) vanilla extract
  • 1/4 cup (60ml) simple syrup
  • Wooden skewers (soaked in water for 30 minutes if grilling)

Instructions

  1. Macerate the strawberries: In a medium bowl, combine the halved strawberries, 2 tablespoons of granulated sugar, and the lemon juice. Toss gently to coat. Let them sit at room temperature for at least 10 minutes, stirring occasionally.
  2. Prepare the cake: Cut the pound cake into 1-inch cubes. You should get about 24-30 cubes from one loaf.
  3. Soak the cake: Using a pastry brush, lightly brush each cake cube with the simple syrup. Don’t soak them—just a light coating on all sides.
  4. Whip the cream: In a large, chilled bowl, combine the cold heavy cream, powdered sugar, and vanilla extract. Using an electric mixer on medium-high speed, whip until stiff peaks form.
  5. Assemble the skewers: Take a skewer and thread on a strawberry half (cut-side facing you), followed by a cube of cake, then a small dollop of whipped cream. Repeat the pattern—strawberry, cake, cream—until you’ve filled the skewer, leaving about an inch at the bottom for a handle. End with a strawberry for presentation.
  6. Chill and serve: Place the assembled skewers on a serving platter and refrigerate for at least 15 minutes before serving. Serve cold.

Notes

For best results, keep the cream cold and don’t over-soak the cake. The simple syrup is key to keeping the cake moist without falling apart. For a grilled version, thread strawberries and cake onto skewers (without cream) and grill over medium heat for 2-3 minutes per side, then assemble with fresh cream.
