  • For homemade hot honey drizzle:
  • ½ cup honey
  • ½ teaspoon red pepper flakes

Instructions

  1. Make the Whipped Feta: In a food processor, combine 8 ounces (225g) of crumbled feta cheese and 4 ounces (115g) of softened cream cheese. Pulse until roughly combined. Add 2 tablespoons (30ml) of extra virgin olive oil, 1 teaspoon (5ml) fresh lemon juice, and a pinch of freshly ground black pepper. Blend again until smooth and creamy. Taste and adjust lemon or pepper as desired. If the mixture is too thick, add olive oil a teaspoon at a time until spreadable. This step takes about 5 minutes.
  2. Prepare the Hot Honey Drizzle: If using store-bought hot honey, set it aside. To make your own, gently warm ½ cup (120ml) honey in a small saucepan over low heat. Add ½ teaspoon (1g) red pepper flakes and stir. Let it infuse on very low heat for about 5 minutes. Remove from heat and let cool slightly. Adjust red pepper flakes to taste.
  3. Arrange the Board: Lay down a generous dollop of whipped feta in the center of your serving board or spread it artfully in a small bowl. Arrange prosciutto slices loosely folded around the feta. Place fresh bread or crackers to one side. Scatter seasonal fruit like halved figs or grapes, along with toasted nuts, in small clusters around the board. Add small bowls with olives or pickles if using. Garnish with fresh herbs. Assembly takes about 10–15 minutes.
  4. Finish with the Hot Honey: Just before serving, drizzle the hot honey generously over the prosciutto and a bit onto the whipped feta. The warmth of the honey slightly softens the feta, creating a harmonious blend of flavors. Drizzle just before guests arrive to keep textures perfect.
  5. Serve and Enjoy: Provide small spreading knives or spoons so everyone can help themselves. Encourage guests to try combinations—bread with whipped feta and a touch of honey, or prosciutto with a nut and fruit bite for contrast.

If you don’t have a food processor, beat feta and cream cheese vigorously with a fork and whisk in olive oil and lemon juice gradually. Adjust red pepper flakes in hot honey to control spice level.
