Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and slice 5 to 6 medium peaches into roughly 1/2-inch thick slices. Toss them gently in a large bowl with 1/4 cup granulated sugar, 1/3 cup brown sugar, 2 tablespoons bourbon, 1 tablespoon fresh lemon juice, 2 tablespoons cornstarch, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg if using. Let sit for 10 minutes.
  3. In a separate bowl, combine 1 cup rolled oats, 3/4 cup all-purpose flour, 1/3 cup brown sugar, and a pinch of salt. Add 1/2 cup cold, cubed unsalted butter. Use a pastry cutter or fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized bits.
  4. Pour the peach filling into a 9×9-inch baking dish, spreading evenly. Sprinkle the oat crumble topping evenly over the peaches without packing it down.
  5. Bake in the preheated oven for 40 to 45 minutes until the topping is golden brown and the peach juices are bubbling.
  6. Let cool for at least 15 minutes before serving to allow the juices to thicken. Serve warm, optionally with vanilla ice cream or whipped cream.
