A quick and easy flatbread recipe combining the sweet softness of figs, creamy goat cheese, salty prosciutto, and a subtle honey drizzle for a perfect balance of flavors and textures.

  • 1 teaspoon active dry yeast
  • 3/4 cup (180ml) warm water (around 110°F/43°C)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 6 to 8 medium fresh figs, sliced
  • 4 ounces (115g) goat cheese, softened
  • 4 ounces (115g) prosciutto, thinly sliced
  • 1 teaspoon fresh rosemary, finely chopped (optional)
  • 2 tablespoons mild wildflower honey

Instructions

  1. Activate the yeast: In a mixing bowl, combine warm water (110°F/43°C) and active dry yeast. Stir gently and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add flour, salt, and olive oil to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms. Turn onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  3. First rise: Place the dough in a lightly oiled bowl, cover, and let it rise in a warm spot for 1 hour or until doubled in size.
  4. Preheat the oven to 475°F (245°C). If using a pizza stone, place it on the middle rack to heat.
  5. Prepare the toppings: Slice figs and chop rosemary. Soften goat cheese by letting it sit at room temperature or microwaving briefly.
  6. Shape the dough: Punch down the dough and roll it out into a roughly 12×8 inch (30×20 cm) rectangle.
  7. Assemble flatbread: Transfer dough to a parchment-lined baking sheet or preheated pizza stone. Spread goat cheese evenly, arrange sliced figs on top, add prosciutto slices, sprinkle rosemary, and brush edges with olive oil.
  8. Bake for 12-15 minutes until crust is golden and bubbly, figs caramelized, and prosciutto crisp but not burnt.
  9. Remove from oven and immediately drizzle honey over the hot flatbread.
  10. Let cool for 3-5 minutes, slice, and serve warm.

Notes

Add honey drizzle immediately after baking to preserve its floral sweetness. Watch prosciutto edges carefully to avoid burning. Do not overload goat cheese to prevent soggy dough. Use parchment paper for easy transfer and cleanup. Dough can be made ahead and refrigerated.
