Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  2. Reduce the apple cider: In a medium saucepan, bring 1 1/2 cups apple cider to a boil over medium-high heat, then reduce to a simmer. Cook for 12-15 minutes, stirring occasionally, until reduced to about 1/2 cup. Set aside to cool slightly.
  3. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Combine wet ingredients: In a separate medium bowl, whisk together granulated sugar, brown sugar, melted butter, eggs, and vanilla extract until smooth. Slowly whisk in the reduced apple cider.
  5. Fold wet into dry: Pour wet ingredients into dry ingredients and fold gently with a rubber spatula until just combined (about 10-12 strokes). Do not overmix.
  6. Prepare cinnamon-sugar coating for pan: In a small bowl, mix 1/4 cup granulated sugar and 1 teaspoon cinnamon. Sprinkle half of this mixture into the bottom of the parchment-lined loaf pan.
  7. Pour batter into the pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  8. Bake for 45-55 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If browning too quickly, tent with foil after 35 minutes.
  9. Cool in the pan for 10 minutes on a cooling rack.
  10. Make final coating: In a shallow dish, mix remaining 1/4 cup sugar and 1 teaspoon cinnamon. Melt 3 tablespoons butter in a small bowl.
  11. Lift bread out of pan using parchment. Brush top and sides generously with melted butter, then roll or sprinkle with cinnamon-sugar mixture until fully coated.
  12. Let cool completely on a cooling rack before slicing (at least 30 minutes).
