Instructions

  1. Preheat your grill to medium-high heat, about 375°F to 400°F (190°C to 205°C).
  2. Halve and pit 6 medium peaches. Brush the cut sides lightly with melted butter to prevent sticking.
  3. In a small bowl, stir together 2 tablespoons bourbon and ½ cup packed brown sugar until it forms a thick syrup.
  4. Place peaches cut-side down on the grill. Cook for 3-4 minutes until grill marks appear and the surface caramelizes.
  5. Flip peaches and brush the grilled sides with the bourbon-brown sugar mixture. Grill for another 2-3 minutes until tender but not mushy. Remove and let cool slightly.
  6. In a mixing bowl, combine 1 cup rolled oats, ¾ cup all-purpose flour, 1 teaspoon ground cinnamon, and ¼ teaspoon salt.
  7. Pour in 4 tablespoons melted unsalted butter and stir or cut in until mixture is crumbly and evenly coated.
  8. Arrange the grilled peaches in a single layer in a 9×9-inch baking dish, cut-side up.
  9. Drizzle any leftover bourbon-brown sugar syrup over the peaches.
  10. Sprinkle the oat topping evenly over the fruit.
  11. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until the topping is golden brown and crisp and the peach juices are bubbling.
  12. Let the crisp cool for 10 minutes, then serve warm with scoops of vanilla bean ice cream on top.

Notes

Watch peaches carefully while grilling to avoid mushiness. Tent topping with foil if browning too quickly. Use ripe but firm peaches for best grilling results. Substitute almond flour for gluten-free option and coconut oil for dairy-free. Adding nuts to topping adds texture and flavor.
