This one-bowl pumpkin banana bread with cinnamon streusel is incredibly moist, naturally sweet, and topped with a crunchy, buttery crumble. It’s an easy, forgiving recipe that comes together in one bowl with no stand mixer required.

  • 1 cup pumpkin purée (not pumpkin pie filling)
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs, room temperature
  • ⅓ cup vegetable oil (or melted coconut oil or melted butter)
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • For the streusel topping:
  • ½ cup all-purpose flour
  • ¼ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons cold unsalted butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides. Lightly spray the exposed ends with nonstick spray.
  2. In a large mixing bowl, mash the two ripe bananas with a fork until mostly smooth. A few small lumps are fine.
  3. Add the pumpkin purée, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract to the same bowl. Whisk until smooth and well combined.
  4. Sprinkle the flour, baking soda, cinnamon, pumpkin pie spice, and salt over the wet mixture. Stir gently with a spatula or wooden spoon until just combined. Do not overmix; a few streaks of flour are okay.
  5. In a small bowl, combine the flour, brown sugar, and cinnamon for the streusel. Add the cold cubed butter and use a pastry cutter or fork to cut it in until the mixture resembles coarse crumbs with pea-sized butter pieces.
  6. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the streusel topping generously over the top, pressing it down gently so it sticks.
  7. Bake for 55–65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the streusel is browning too quickly after 40 minutes, tent the pan loosely with aluminum foil.
  8. Cool in the pan for 15 minutes, then lift the bread out using the parchment paper and transfer to a wire rack to cool completely before slicing.

Notes

Let the bread cool completely before slicing to avoid a gummy texture. The streusel sets as it cools, giving cleaner slices. For best flavor, make it a day ahead—the flavors meld overnight.
