Moist One-Bowl Pumpkin Chocolate Chip Bread

This moist one-bowl pumpkin chocolate chip bread is incredibly tender, stays fresh for days, and comes together with just a spatula and a single bowl. It’s the perfect fall treat with melty chocolate in every slice.

  • 1 cup (245g) canned pumpkin puree
  • 1 ¾ cups (220g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. If not using parchment, grease the pan thoroughly.
  2. In a large mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk or stir until smooth and well combined.
  3. Sprinkle flour, pumpkin pie spice, baking soda, baking powder, and salt over the wet mixture. Stir gently with a spatula until just combined. Do not overmix.
  4. Fold in chocolate chips with 5-6 gentle strokes. Reserve about 2 tablespoons for topping if desired.
  5. Scrape batter into prepared loaf pan and spread evenly. Tap pan on counter to release air bubbles. Sprinkle reserved chocolate chips on top if using.
  6. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  7. Let bread cool in pan for 15 minutes, then lift out using parchment handles and transfer to a wire rack. Cool completely before slicing.

Notes

For best results, use room temperature eggs and pumpkin puree. Do not open the oven door for the first 40 minutes. The bread tastes even better on day two. For a cream cheese swirl, beat 4 oz softened cream cheese with 2 tbsp sugar and 1 egg, then swirl into batter before baking.
