  • ¾ cup (150g) packed brown sugar

  • 1 teaspoon vanilla extract
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • Optional: ½ cup chopped walnuts or pecans
  • Optional: ½ cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mash the bananas in a mixing bowl with a fork or potato masher until mostly smooth with some small lumps.
  3. Add sour cream, eggs, melted butter, and vanilla extract to the mashed bananas and mix gently until combined.
  4. In a separate small bowl, whisk together the flour, baking soda, and salt.
  5. Sprinkle the dry ingredients over the wet ingredients and gently fold together with a wooden spoon or spatula until just combined. Avoid overmixing.
  6. Stir in the brown sugar evenly; the batter will be thick and sticky.
  7. Fold in optional walnuts or dark chocolate chips if using.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-65 minutes, checking at 55 minutes by inserting a toothpick into the center; it should come out with a few moist crumbs but no raw batter.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
