  • For the Vanilla Bean Glaze:
  • 1 cup powdered sugar (120 g)
  • 2 tablespoons milk or cream (30 ml)
  • ½ teaspoon vanilla bean paste or vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with liners or lightly grease it.
  2. Grate about 1 ½ cups of zucchini using a fine grater. Place shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and poppy seeds. Set aside.
  4. In a large bowl, whisk the sugar and eggs until well blended. Add the oil, lemon zest, lemon juice, and vanilla extract. Mix until smooth and fragrant.
  5. Fold the squeezed zucchini into the wet mixture gently until evenly distributed.
  6. Gradually add the dry ingredients to the wet, folding just until combined. Avoid overmixing.
  7. Spoon the batter evenly into the prepared muffin cups, filling about ¾ full.
  8. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. While muffins cool, whisk the powdered sugar, milk, and vanilla bean paste together until smooth. Adjust milk quantity for desired glaze thickness.
  11. Drizzle the vanilla bean glaze over the cooled muffins and let set for about 10 minutes before serving.
