  • 20 ounces frozen shredded hash browns
  • 1 medium onion, finely diced
  • 8 large eggs
  • 1 cup whole milk
  • 1 tablespoon Dijon mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 stalks green onions, sliced (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the sausage, breaking it into crumbles, until no pink remains. Drain excess grease.
  3. In the same skillet, sauté the diced onion until soft and translucent, about 5 minutes.
  4. In a large mixing bowl, combine the cooked sausage, onions, and frozen hash browns. Toss to mix.
  5. In a separate bowl, whisk together the eggs, milk, Dijon mustard, salt, and pepper until frothy.
  6. Pour the egg mixture over the hash brown and sausage mix. Stir gently to coat everything evenly.
  7. Spread the mixture into the prepared baking dish and sprinkle the shredded cheddar cheese evenly over the top.
  8. Bake for 45-50 minutes, or until the center is set and the top is golden brown.
  9. Remove from oven and let rest for 10 minutes before cutting and serving.
  10. Garnish with sliced green onions and serve warm.

Notes

Do not skip the resting time; it allows the eggs to set so slices hold together. If making ahead, assemble the night before, cover tightly, and refrigerate. Add 5-10 minutes to baking time if baking from cold. Ensure sausage is drained well to prevent a greasy casserole.
