  • 1 whole turkey (1214 lbs), fresh or thawed, giblets removed
  • 1 cup unsalted butter, softened to room temperature
  • 45 sprigs fresh rosemary, needles stripped and chopped
  • 45 sprigs fresh thyme, leaves chopped
  • 68 cloves garlic, minced
  • 2 tablespoons sea salt or kosher salt
  • 1 tablespoon black pepper, freshly cracked
  • 2 lemons (1 juiced, 1 halved)
  • 1 large yellow onion, quartered
  • 1 cup carrots, roughly chopped
  • 1 cup celery, roughly chopped
  • 2 cups chicken stock, low-sodium

Instructions

  1. Preheat oven to 325°F (165°C). Remove turkey from fridge and let sit at room temperature for 30 minutes. Pat the turkey completely dry with paper towels.
  2. In a medium bowl, combine softened butter, chopped rosemary, chopped thyme, minced garlic, salt, pepper, and the juice of one lemon. Mix until a bright green paste forms.
  3. Gently loosen the skin over the breast and thighs using your fingers. Push handfuls of the herb butter under the skin, spreading it evenly over the meat. Rub the remaining butter all over the outside of the turkey.
  4. Place halved lemons, quartered onion, and any extra herb sprigs inside the turkey cavity.
  5. Place the turkey on a rack in a roasting pan. Pour chicken stock into the bottom of the pan.
  6. Roast in the preheated oven for 2.5 to 3 hours, basting with pan juices every 45 minutes.
  7. The turkey is done when the thickest part of the thigh reads 165°F (74°C) and the breast reads 150-155°F (65-68°C). Tent with foil if skin browns too quickly.
  8. Remove turkey from oven and let rest for at least 20 minutes before carving.

Notes

Ensure the turkey is completely dry before roasting for crispy skin. Do not skip the resting phase to allow juices to redistribute. If the skin browns too quickly, tent the breast with foil. For gravy, use the pan drippings and thicken with flour or cornstarch.
