Instructions

  1. Prepare an ice bath by filling a large bowl with ice water and set aside.
  2. Bring a large pot of water to a rolling boil (about 4-5 quarts).

  4. Blanch peaches by dropping them into boiling water for 30 to 60 seconds until skin loosens.
  5. Immediately transfer peaches to the ice water bath to stop cooking.

  11. Arrange peach slices in a single layer on a baking sheet lined with parchment paper and flash freeze for 1 to 2 hours until firm.
