A quick and easy homemade pumpkin spice latte made with real pumpkin puree, warm spices, and your choice of milk. This cozy fall drink comes together in under 10 minutes and tastes better than any coffee shop version.

  • 1 cup (240 ml) milk (whole, oat, or almond)
  • 2 tablespoons (30 g) pumpkin puree (not pumpkin pie filling)
  • ½ cup (120 ml) strong brewed coffee or 2 shots espresso
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • 1 to 2 tablespoons (15 to 30 ml) maple syrup or packed brown sugar
  • Pinch of salt
  • Whipped cream (optional, for topping)
  • Extra cinnamon or pumpkin pie spice (optional, for garnish)

Instructions

  1. Brew ½ cup of strong coffee or pull 2 shots of espresso. Set aside.
  2. In a small saucepan, combine 1 cup of milk and 2 tablespoons of pumpkin puree. Whisk until smooth and fully incorporated.
  3. Place the saucepan over medium heat. Warm the milk and pumpkin mixture for 2 to 3 minutes, whisking occasionally, until hot but not boiling (small bubbles will form around the edges).
  4. Whisk in 1 teaspoon of pumpkin pie spice, ½ teaspoon of vanilla extract, 1 to 2 tablespoons of maple syrup or brown sugar, and a pinch of salt. Continue whisking until everything is dissolved and fragrant, about 30 seconds.
  5. Optional: Remove from heat and froth the milk using a handheld frother, or pour into a jar, seal, and shake vigorously for 30 seconds, then return to the saucepan.
  6. Pour the brewed coffee or espresso into a 12-ounce mug. Slowly pour the hot pumpkin milk mixture over the coffee. Stir gently to combine.
  7. Top with whipped cream and a dusting of cinnamon or pumpkin pie spice, if desired. Serve immediately.

Notes

Don’t let the milk boil, as it can scorch and taste burnt. For dairy-free versions, oat milk provides the creamiest texture. The pumpkin puree adds natural sweetness, so start with 1 tablespoon of sweetener and adjust to taste. The pumpkin milk mixture can be made ahead and stored in the refrigerator for up to 3 days.
