A quick and easy healthy meal featuring lean ground turkey, fresh veggies, and a tangy creamy peanut lime sauce served with crisp butter lettuce leaves. Perfect for light dinners or lunches that are satisfying and flavorful.

  • 1 lb (450 g) lean ground turkey (93% lean preferred)
  • 1 large head or 810 butter lettuce leaves, washed and patted dry
  • 1 medium red bell pepper, finely diced
  • 1 large carrot, shredded or julienned
  • 3 stalks green onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup (65 g) creamy peanut butter (natural, no added sugar preferred)
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp soy sauce or tamari (use tamari for gluten-free)
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 23 tbsp water (to thin the sauce as needed)
  • 1 tsp sesame oil (optional)
  • 2 tbsp chopped peanuts (for garnish)
  • A handful fresh cilantro or basil, chopped
  • Optional chili flakes or sriracha, to taste

Instructions

  1. Prep the veggies: Rinse and dry butter lettuce leaves carefully. Dice the red bell pepper, shred the carrot, and slice the green onions. Set aside. (About 10 minutes)
  2. Make the sauce: In a small bowl, whisk together peanut butter, lime juice, soy sauce, honey, rice vinegar, sesame oil, and water. Adjust water to get a creamy but pourable consistency. Taste and add chili flakes or sriracha if desired. (5 minutes)
  3. Cook the turkey: Heat a drizzle of oil in a skillet over medium-high heat. Add minced garlic and grated ginger, cooking until fragrant (about 30 seconds). Add ground turkey, breaking it up with a spatula. Cook for 7–10 minutes until browned and cooked through, stirring occasionally. Season lightly with salt and pepper. (10 minutes)
  4. Combine veggies and turkey: Stir in diced bell pepper, shredded carrot, and half the green onions. Cook for another 2 minutes to warm veggies slightly while keeping crunch. Remove from heat. (2–3 minutes)
  5. Assemble the bowls: Spoon turkey and veggie mixture into bowls or serve family-style. Drizzle with creamy peanut lime sauce. Garnish with chopped peanuts, remaining green onions, and fresh herbs. Serve butter lettuce leaves on the side as wraps. (5 minutes)

Notes

If turkey feels dry, add a splash of broth or more sauce. Avoid overcooking veggies to maintain crunch. Warm lettuce leaves briefly in microwave wrapped in damp paper towel to soften. Sauce can be made up to 3 days ahead and stored in fridge. Store turkey mixture and lettuce separately to avoid soggy wraps.
