A quick and easy turkey chili that’s rich, smoky, and deeply satisfying without feeling heavy. Made with lean ground turkey, black beans, and a bold spice blend, this 30-minute recipe is perfect for weeknight dinners and meal prep.

  • 1 large yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and minced
  • 1.5 pounds lean ground turkey (93% lean)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • Greek yogurt or sour cream (for serving, optional)
  • Shredded cheddar cheese (for serving, optional)
  • Fresh cilantro, chopped (for serving, optional)
  • Diced avocado (for serving, optional)
  • Lime wedges (for serving, optional)

Instructions

  1. Heat the oil in a large Dutch oven or heavy-bottomed pot over medium-high heat until shimmering. Add the diced onion and bell pepper, and cook for 4-5 minutes, stirring occasionally, until the onion is translucent and softened.
  2. Add the minced garlic and jalapeño, and cook for 1 minute, stirring constantly to prevent burning.
  3. Push the vegetables to the sides of the pot and add the ground turkey. Break it into large chunks and let it cook undisturbed for 3-4 minutes to develop a deep brown sear.
  4. Stir the turkey and continue cooking for another 4-5 minutes, breaking it into smaller pieces, until it is browned with golden-brown spots.
  5. Sprinkle the chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper over the turkey and vegetables. Stir well to coat and cook for 1 minute until fragrant.
  6. Pour in the fire-roasted diced tomatoes and tomato sauce, scraping up any browned bits from the bottom of the pot.
  7. Add the rinsed black beans and chicken broth. Stir to combine, bring to a gentle boil, then reduce heat to low and simmer uncovered for 15-20 minutes, stirring occasionally.
  8. Taste and adjust seasoning with additional salt, pepper, or cayenne as needed. If too thick, add a splash more broth; if too thin, simmer longer to reduce.
  9. Remove from heat and let rest for 5 minutes. Serve hot with desired toppings such as Greek yogurt, cheddar cheese, cilantro, avocado, and lime wedges.

Notes

For best flavor, brown the turkey deeply without stirring too early. Toast the spices for 1 minute before adding liquids. The chili improves overnight, so consider making it a day ahead. For a vegetarian version, replace turkey with 2 more cans of beans and use vegetable broth. For lower carb, skip beans and add extra bell peppers and zucchini.
