  • 2 medium zucchinis, sliced into half-moons (about 3 cups)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, finely grated or minced
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons low-sodium soy sauce or tamari
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced thinly (optional)
  • Fresh lemon or lime juice, a squeeze

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels. Slice zucchinis into 1/4 inch thick half-moons. Mince garlic and grate fresh ginger finely.
  2. Heat a large non-stick skillet or wok over medium-high heat and add 2 tablespoons of olive or avocado oil. Heat until shimmering but not smoking.
  3. Add minced garlic and grated ginger to the pan. Stir constantly for about 30 seconds until fragrant but not burnt.
  4. Add shrimp in a single layer. Let sear without moving for 1-2 minutes until edges turn pink and slightly golden. Flip and cook the other side for another minute.
  5. Add sliced zucchini and stir fry for 3-4 minutes until tender but still crisp.
  6. Drizzle soy sauce or tamari, add sesame oil and red pepper flakes if using. Toss to coat evenly.
  7. Squeeze fresh lemon or lime juice over the stir fry and garnish with sliced green onions. Toss gently.
  8. Serve immediately, optionally over steamed rice, noodles, or cauliflower rice.

Notes

Pat shrimp dry before cooking to prevent steaming and promote browning. Keep pan hot for best sear. Avoid overcrowding the pan to prevent steaming. Adjust soy sauce saltiness to taste. Use fresh garlic and ginger for best flavor. If zucchini releases too much water, increase heat to evaporate moisture quickly.
