Healthy No-Bake Granola Bars: Easy 5-Minute Snack

These healthy no-bake granola bars are chewy, sweet, and just salty enough. Made with simple pantry ingredients, they come together in 5 minutes and are perfect for busy mornings or a quick snack.

Ingredients

  • 2 cups rolled oats (use certified gluten-free if needed)
  • 1/2 cup creamy peanut butter (natural, no added sugar)
  • 1/3 cup honey (or maple syrup for vegan)
  • 2 tablespoons unsalted butter (or coconut oil for dairy-free)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dried fruit (chopped apricots, raisins, cranberries, or dates)
  • 1/4 cup dark chocolate chips (or chopped dark chocolate)
  • 2 tablespoons chia seeds (optional)

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides for easy removal.
  2. In a small saucepan over low heat, combine peanut butter, honey, and butter. Stir constantly until melted and smooth, about 2-3 minutes. Do not let it boil.
  3. Remove from heat and stir in vanilla extract and salt. Taste and adjust if needed.
  4. In a large mixing bowl, combine rolled oats, dried fruit, chocolate chips, and chia seeds (if using). Stir to distribute evenly.
  5. Pour the warm peanut butter mixture over the dry ingredients. Fold with a rubber spatula until every oat is coated and the mixture is uniformly sticky and clumpy.
  6. Transfer the mixture to the prepared pan. Press down firmly using the back of a measuring cup, bottom of a glass, or lightly oiled hands. Press for at least a minute to compact tightly.
  7. Refrigerate for at least 2 hours, or overnight for best results. Do not cut before fully chilled.
  8. Lift the bars out using the parchment handles. Place on a cutting board and cut into 12 even bars with a sharp knife. Wipe the knife clean between cuts for neat edges.

Notes

For best texture, use rolled oats, not quick oats. Press the mixture very firmly into the pan. Chill for at least 2 hours before cutting. If bars crumble, use as a topping for yogurt or oatmeal. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
