Instructions

  1. Prepare the Veggies: Wash all fresh vegetables thoroughly. Grate the carrot and zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. Chop the spinach and herbs finely. This should take about 10 minutes.
  2. Mix the Cream Cheese Spread: In a mixing bowl, combine the softened cream cheese with grated carrot, zucchini, chopped spinach, and herbs. Add garlic powder, onion powder, salt, and pepper. Stir well until evenly distributed. Fold in shredded cheese or mustard if using. This takes about 5 minutes.
  3. Assemble the Pinwheels: Lay a tortilla flat on a clean surface. Spread a generous, even layer (about 1/4 inch thick) of the cream cheese and veggie mixture over the entire tortilla, leaving a small gap at the edges. Place turkey slices evenly over the spread. Roll the tortilla tightly from one edge to the other, pressing gently to keep it snug. Wrap the roll tightly in plastic wrap and refrigerate for at least 30 minutes to firm up.
  4. Slice and Serve: Remove the wrapped roll from the fridge. Using a sharp serrated knife, slice the roll into 1-inch (2.5 cm) thick pinwheels. Arrange on a platter and serve.
