  • 8 oz cream cheese, softened
  • 1/2 cup Buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 1 1/2 cups cooked, shredded chicken (rotisserie recommended)
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons unsalted butter, melted
  • Optional: 1/4 cup crumbled blue cheese or ranch dressing for topping
  • Optional: chopped chives or green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a 24-cup mini muffin tin with nonstick cooking spray.
  2. In a medium bowl, beat the softened cream cheese with a fork until smooth. Add the Buffalo wing sauce and stir until fully combined. Fold in the shredded chicken and cheddar cheese until evenly coated.
  3. Open the can of biscuits and separate into 8 biscuits. Cut each biscuit into thirds. Press each piece into a mini muffin cup, pushing the dough up the sides to form a cup.
  4. Spoon about 1 heaping tablespoon of the buffalo chicken mixture into each dough cup.
  5. Melt the butter and lightly brush the exposed edges of the biscuit dough with it.
  6. Bake on the middle rack for 12-15 minutes, or until the biscuit edges are golden brown and the filling is bubbly.
