Instructions

  1. Slice the watermelon: Using a sharp serrated knife, slice off a 1-inch thick round from the middle of the watermelon. Lay it flat on a large serving plate or pizza board.
  2. Prepare the yogurt spread: In a medium bowl, mix the Greek yogurt with honey and vanilla extract until smooth and creamy. Adjust sweetness to taste.
  3. Slice and shape the berries: Wash and dry the mixed berries. Use a small star-shaped cookie cutter to cut stars from larger berries or slice smaller berries in half. Alternatively, slice or dice berries thinly.
  4. Spread the yogurt: Evenly spread the yogurt mixture over the watermelon round using a spreading knife or offset spatula to about 1/4 inch thickness.
  5. Arrange the berry stars: Scatter the star-shaped berries artistically over the yogurt layer, distributing colors evenly.
  6. Garnish and finish: Sprinkle lime zest evenly over the top and scatter chopped fresh mint leaves if using.
  7. Chill and serve: Refrigerate the watermelon pizza for about 15 minutes before serving to let flavors meld and keep it cool.
