A refreshing and playful summer dessert featuring thick watermelon rounds topped with creamy yogurt frosting and a colorful mix of fresh berries. Quick to assemble and perfect for warm weather gatherings.

Ingredients

Scale
  • 1 large seedless watermelon (about 68 pounds), sliced into 1-inch thick rounds
  • 1 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons cream cheese, softened (optional)
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries or blackberries
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Slice the watermelon: Cut off both ends to create flat surfaces, then slice into 1-inch thick rounds about 6-8 inches wide. Trim rind if desired.
  2. Prepare the yogurt frosting: In a medium bowl, whisk together Greek yogurt, honey, vanilla extract, and cream cheese (if using) until smooth and creamy.
  3. Spread the frosting: Place watermelon rounds on a serving platter and spread a generous layer of yogurt frosting over each slice, leaving a small border at the rind edge.
  4. Add the berry toppings: Arrange sliced strawberries, blueberries, and raspberries evenly over the frosted watermelon slices. Garnish with fresh mint leaves if desired.
  5. Serve immediately or chill: Serve right away for best texture, or cover loosely and chill up to 2 hours before serving.

Notes

Use firm, ripe watermelon to prevent sogginess. Keep watermelon and frosting chilled before assembling. Spread frosting evenly but not too thick. Serve soon after assembly for best texture. For vegan version, substitute Greek yogurt and cream cheese with coconut yogurt and coconut cream. Add nuts or granola just before serving for crunch.
