A refreshing and vibrant summer salad combining juicy watermelon, salty feta, fresh mint, and tangy balsamic glaze. Perfect for hot afternoons and casual gatherings.

Ingredients

  • 4 cups seedless watermelon, diced into bite-sized chunks
  • 1 cup feta cheese, crumbled
  • ¼ cup fresh mint leaves, roughly chopped or torn
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Pinch of sea salt, if needed

Instructions

  1. Cut seedless watermelon into 1-inch bite-sized cubes (about 4 cups). Place in a large mixing bowl.
  2. Crumble 1 cup of feta cheese into small chunks and gently fold into the watermelon.
  3. Rinse and pat dry ¼ cup fresh mint leaves, then roughly chop or tear and add to the bowl.
  4. Drizzle 1 tablespoon extra virgin olive oil over the salad. Add freshly ground black pepper to taste and a light pinch of sea salt if needed. Toss gently to combine without bruising the watermelon.
  5. Just before serving, drizzle 2 tablespoons balsamic glaze evenly over the salad. Optionally, serve the glaze on the side.
  6. Give the salad one last gentle toss to distribute the glaze slightly but keep some streaks visible. Serve immediately or chill up to 30 minutes before serving.

Notes

If watermelon is very juicy, drain excess liquid before mixing to prevent sogginess. Keep feta and mint separate until last minute if preparing ahead. For vegan version, substitute feta with marinated tofu or plant-based cheese and use vegan-friendly balsamic glaze. Add toasted nuts or seeds for extra crunch. Drizzle balsamic glaze last to avoid watery salad.
