Ingredients

Scale
  • 1 pound lean ground turkey (93% lean)
  • 1 small yellow onion, finely chopped
  • 2 cloves fresh garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 tablespoon tomato paste
  • Juice of 1 lime
  • 8 large romaine or butter lettuce leaves, washed and dried
  • 1 ripe avocado, peeled and pitted
  • 1/4 cup plain Greek yogurt (or dairy-free alternative)
  • 2 tablespoons fresh cilantro, chopped
  • 1 stalk green onion, thinly sliced (optional)
  • 1 tablespoon olive oil

Instructions

  1. Gently separate the lettuce leaves, wash thoroughly under cold water, and pat dry. Set aside.
  2. In a bowl, mash the avocado with a fork until mostly smooth. Add Greek yogurt, fresh lime juice, chopped cilantro, a pinch of salt, and stir until combined. Optionally blend for extra creaminess. Refrigerate.
  3. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
  4. Add minced garlic and cook for 30 seconds.
  5. Add ground turkey, crumble and cook until no longer pink, about 6-8 minutes.
  6. Stir in tomato paste, cumin, chili powder, smoked paprika, cayenne (if using), salt, and pepper. Cook for 2 more minutes to meld flavors. Adjust seasoning as needed.
  7. Optionally warm lettuce leaves in a dry pan or microwave for 10 seconds for pliability.
  8. Spoon the seasoned turkey into each lettuce leaf. Drizzle generously with avocado lime sauce. Garnish with sliced green onions and extra cilantro if desired.
  9. Serve immediately to keep lettuce crisp and flavors bright.

Notes

Do not rush browning the turkey to develop caramelized flavor. Use ripe avocados for the best creamy drizzle. Keep lettuce leaves dry to avoid sogginess. The avocado lime drizzle can be made vegan by using plant-based yogurt. Turkey filling can be made ahead and stored up to 3 days in the fridge. Reheat turkey gently before assembling. Avoid freezing avocado drizzle as it becomes watery.
