Fresh Sautéed Garlic Scapes with Lemon and Parmesan

A quick and easy side dish featuring tender garlic scapes sautéed with fresh lemon juice and Parmesan cheese, delivering a bright, savory flavor with a satisfying crunch.

  • 1 pound garlic scapes, trimmed and cut into 2-inch pieces
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice (from 1 medium lemon)
  • ¼ cup (25 g) finely grated Parmesan cheese
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes
  • Optional: chopped fresh herbs such as parsley or basil

Instructions

  1. Rinse garlic scapes under cold water and pat dry. Trim off tough ends and cut into 2-inch pieces.
  2. Heat a large skillet over medium heat and add 2 tablespoons of extra virgin olive oil. Warm until shimmering but not smoking.
  3. Add garlic scapes to the pan in a single layer. Stir occasionally and sauté for 6-8 minutes until tender-crisp and slightly golden.
  4. Turn off heat and squeeze fresh lemon juice over the scapes. Toss to coat evenly.
  5. Season with salt, freshly ground black pepper, and optional red pepper flakes.
  6. Sprinkle ¼ cup finely grated Parmesan cheese over the hot scapes and toss gently to melt the cheese slightly.
  7. Serve immediately, garnished with optional fresh herbs.

Notes

If garlic scapes are thicker or older, increase cooking time by a couple of minutes and add a splash of water or broth to help steam and soften them without burning. Avoid overcooking to maintain tender-crisp texture. Use finely grated Parmesan for better melting. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently in a skillet.
