Colorful and kid-approved wraps featuring creamy hummus and fresh veggies rolled in a soft tortilla, perfect for a quick, healthy snack.

Ingredients

  • Large flour tortillas (10-inch/25 cm size; whole wheat or gluten-free options work well)
  • Hummus (about 1 cup/240 ml; store-bought or homemade)
  • Red, yellow, and orange bell peppers, thinly sliced
  • Cucumber, peeled and julienned
  • Baby spinach leaves (fresh and tender)
  • Shredded carrots
  • Optional: thinly sliced avocado, alfalfa sprouts, or shredded cheese

Instructions

  1. Wash and dry all the vegetables. Thinly slice the bell peppers into strips about 2-3 inches long, julienne the cucumber, and shred the carrots finely. Set aside the spinach leaves, making sure they’re dry.
  2. Place one large tortilla flat on a clean cutting board or plate.
  3. Spread about 2-3 tablespoons (30-45 ml) of hummus evenly over the entire tortilla, leaving a small border around the edges.
  4. Layer the sliced bell peppers, cucumber, shredded carrots, and spinach leaves evenly over the hummus.
  5. Starting at one edge, carefully roll the tortilla tightly but gently to keep the filling snug inside. Wrap the rolled tortilla in plastic wrap or parchment paper and refrigerate for 15 minutes to firm up.
  6. Unwrap and use a sharp knife to cut the roll into 1-inch (2.5 cm) thick pinwheels.
  7. Arrange the pinwheels on a plate and serve fresh.

Notes

If the tortilla cracks while rolling, warm it slightly in the microwave for 10-15 seconds to soften. Keep veggies dry to avoid soggy wraps. Chill the rolled wrap before slicing for cleaner cuts. Experiment with flavored hummus or add cream cheese or turkey for variation.
