A quick and refreshing summer salad that swaps traditional tomatoes for juicy nectarines, paired with fresh mozzarella and fragrant basil. This easy recipe is perfect for light meals and gatherings.

  • 3 medium fresh nectarines, ripe but firm, sliced thinly
  • 8 ounces fresh mozzarella balls or mozzarella log, sliced
  • A handful of fresh basil leaves, washed and patted dry
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze or reduction (optional)
  • Pinch of flaky sea salt (such as Maldon)
  • Freshly ground black pepper to taste

Instructions

  1. Rinse nectarines under cool water, then slice thinly into rounds or half-moons about 1/4-inch thick. Set aside on a plate to drain excess juice if very ripe (about 5 minutes).
  2. Pat fresh mozzarella dry with paper towels to remove moisture. Slice into 1/4-inch thick pieces similar in size to nectarine slices.
  3. On a serving platter, alternate slices of nectarine and mozzarella in a circle or rows. Tuck fresh basil leaves between the layers evenly.
  4. Drizzle 2 tablespoons of extra virgin olive oil over the salad. If using, drizzle about 1 tablespoon of balsamic glaze in a zig-zag pattern.
  5. Sprinkle a pinch of flaky sea salt and freshly ground black pepper over the top.
  6. Let the salad sit at room temperature for about 5 minutes before serving to allow flavors to mingle.
  7. Serve using a wide spatula or tongs, ensuring each portion has nectarines, mozzarella, and basil.

Notes

Let nectarines drain if very ripe to avoid soggy salad. Pat mozzarella dry to reduce moisture. Serve at room temperature for best flavor. Optional toasted pine nuts add a nice crunch. Balsamic glaze is optional but adds tangy sweetness.
