  • 1 cup (250g) whole milk ricotta cheese
  • 2 tablespoons honey
  • ½ cup (120ml) balsamic vinegar for reduction
  • 1 small baguette, sliced into ½-inch (1.25 cm) rounds
  • 1 tablespoon extra virgin olive oil for brushing
  • Fresh thyme or mint leaves (optional, for garnish)

Instructions

  1. Prepare the balsamic reduction by pouring ½ cup (120ml) balsamic vinegar into a small saucepan over medium heat. Bring to a gentle simmer, then reduce heat to low and simmer slowly, stirring occasionally, until thickened to a syrupy consistency, about 15-20 minutes. Remove from heat and let cool.
  2. Slice the baguette into ½-inch (1.25 cm) rounds. Brush each slice lightly with olive oil on both sides. Arrange on a baking sheet and toast in a preheated oven at 375°F (190°C) for 8-10 minutes, flipping halfway through, until golden and crisp. Let cool slightly.
  3. Wash figs gently and pat dry. Cut each fig into quarters or thin slices depending on size. Whisk ricotta lightly for a smoother spread.
  4. Spread about 1 tablespoon of ricotta on each toasted bread slice. Top with 2-3 fig slices or quarters. Drizzle a teaspoon of honey over each, then finish with a drizzle of the cooled balsamic reduction. Garnish with fresh thyme or mint leaves if desired.
  5. Arrange crostini on a platter and serve immediately for best texture. If making ahead, keep components separate and assemble just before serving.

Notes

Be patient with the balsamic reduction; cook it low and slow to avoid burning. Toast bread until golden and crisp to prevent sogginess. Whisk ricotta lightly for a smoother spread. If figs are underripe, roast them for 5 minutes at 400°F (200°C) with brown sugar to soften and sweeten.
