A quick and easy appetizer featuring fresh cherry tomatoes, creamy mini mozzarella, and aromatic basil leaves drizzled with balsamic glaze. Perfect for last-minute guests or a light, satisfying snack.

Ingredients

  • Mini Mozzarella Balls (Bocconcini or Ciliegine), about 8 oz
  • Cherry or Grape Tomatoes, about 1 pint
  • Fresh Basil Leaves, about 1 cup
  • Extra Virgin Olive Oil, 1 tablespoon
  • Balsamic Glaze, for drizzling
  • Sea Salt, to taste
  • Freshly Cracked Black Pepper, to taste
  • Optional: Toasted pine nuts or chopped walnuts
  • Optional: Thin slices of prosciutto
  • Optional: Drizzle of honey

Instructions

  1. Rinse cherry tomatoes and basil leaves gently under cold water. Pat dry thoroughly. If tomatoes are large, cut in half.
  2. Place mini mozzarella balls in a mixing bowl. Drizzle with 1 tablespoon extra virgin olive oil. Sprinkle with sea salt and freshly cracked black pepper. Toss gently to coat evenly.
  3. Thread one cherry tomato, a folded basil leaf, and one mini mozzarella ball onto each skewer. Repeat to fill skewers with 3 to 4 sets.
  4. Arrange skewers on a serving platter.
  5. Drizzle balsamic glaze over the skewers just before serving or serve glaze on the side for dipping.
  6. Optionally sprinkle extra sea salt or fresh herbs like oregano or thyme. Serve immediately.

Notes

Keep basil leaves dry to prevent sogginess. Add balsamic glaze just before serving. For grilling, briefly grill skewers 2 minutes per side for a smoky flavor. Can substitute mini mozzarella with vegan cheese or tofu for dairy-free option.
