A quick and refreshing non-alcoholic mocktail combining sweet watermelon, tangy lime, and a spicy Tajín rim for a perfect summer drink.

  • 3 cups seedless watermelon chunks, chilled
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 small jalapeño, sliced and deseeded if milder heat is preferred
  • 1 to 2 teaspoons agave syrup or honey (optional)
  • 2 tablespoons Tajín seasoning for rimming glasses
  • 1/2 cup sparkling water or club soda per serving
  • Ice cubes as needed
  • Pinch of salt (mixed with Tajín for rimming)

Instructions

  1. Prepare the glasses by running a lime wedge around the rims.
  2. Mix Tajín seasoning with a pinch of salt on a small plate.
  3. Dip the rims of the glasses into the Tajín and salt mixture to coat evenly. Set aside to dry slightly (about 5 minutes).
  4. In a blender, add chilled watermelon chunks, fresh lime juice, and sliced jalapeño (start with half for less heat). Blend on high until smooth (30 seconds to 1 minute).
  5. Taste the mixture and add 1 to 2 teaspoons of agave syrup or honey if additional sweetness is desired. Blend again briefly.
  6. Optional: Strain the blended mixture through a fine mesh strainer into a pitcher for a smoother texture.
  7. Fill each prepared glass halfway with ice cubes.
  8. Pour the watermelon mixture into the glass about two-thirds full.
  9. Top off with 1/2 cup sparkling water or club soda for fizz.
  10. Stir gently to combine and garnish with a lime wheel or small watermelon wedge on the rim.
  11. Serve immediately to enjoy the fresh, fizzy, and spicy flavors.

Notes

Use ripe, fragrant watermelon for best flavor. Adjust jalapeño heat by slicing thin and removing seeds. Serve immediately to retain sparkling water fizz. For a smoother drink, strain the blended mixture. Tajín rim adds a spicy-salty flavor and texture; if unavailable, use chili powder, lime zest, and salt as a substitute. For milder versions, omit jalapeño. To mellow jalapeño heat, soak slices in lime juice for 10 minutes before blending.
