  • 1 large bag of sturdy tortilla chips (thick-cut or restaurant style)
  • 1 can (15 oz / 425 g) chili with beans
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 1 small garlic clove, minced (optional)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 4 regular or beef hot dogs, sliced into bite-sized pieces
  • 1 tablespoon olive oil or butter
  • 2 green onions, sliced thinly
  • ¼ cup pickled jalapeños (optional)
  • ½ cup sour cream or Greek yogurt
  • Fresh cilantro leaves (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, stir together the canned chili, smoked paprika, chili powder, and minced garlic. Taste and adjust seasoning if desired. Set aside.
  3. Heat olive oil or butter in a skillet over medium heat. Add sliced hot dogs and sauté for about 5 minutes, turning occasionally, until golden brown and slightly crispy.
  4. Spread a generous layer of tortilla chips in your baking dish.
  5. Evenly spoon half of the chili mixture over the chips.
  6. Scatter half of the cooked hot dog slices over this layer.
  7. Sprinkle half of the shredded cheddar and Monterey Jack cheese over the top.
  8. Repeat the layering with the remaining chips, chili, hot dogs, and cheese.
  9. Place the baking dish in the oven for 10-15 minutes, until the cheese is melted and bubbly. Watch carefully after 10 minutes to avoid burning chips.
  10. Remove from oven and immediately sprinkle sliced green onions and pickled jalapeños over the top.
  11. Add dollops of sour cream or Greek yogurt and scatter fresh cilantro leaves if desired.
  12. Serve warm and enjoy.

Notes

If chili is too thick, thin with a splash of water or broth before layering. Avoid overloading chips to prevent sogginess. Cook hot dogs well for best texture. Use freshly shredded cheese for better melt. Start checking nachos at 10 minutes in the oven to avoid burning. Can prepare chili and hot dogs ahead of time.
