Flavorful Grilled Peach and Burrata Salad with Prosciutto

A quick and easy summer salad featuring smoky grilled peaches, creamy burrata, and salty prosciutto, perfect for light yet satisfying meals.

  • 34 ripe but firm peaches, halved and pitted
  • 8 ounces burrata cheese
  • 4 ounces thinly sliced prosciutto
  • 4 cups arugula or mixed greens
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze or reduction
  • A handful of fresh basil leaves, torn
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Wash and halve 3-4 peaches, remove the pits, and brush the cut sides with about 1 tablespoon of olive oil.
  2. Preheat grill or grill pan to medium-high heat, around 400°F (204°C).
  3. Place peaches cut side down on the grill and cook for 3-4 minutes until grill marks appear and peaches start to soften but hold their shape.
  4. Flip peaches and grill the skin side for 2 minutes to warm through. Remove and set aside to cool slightly.
  5. In a small bowl, whisk together 1 tablespoon olive oil, 1 tablespoon fresh lemon juice, salt, and freshly ground black pepper to taste.
  6. Place 4 cups of arugula or mixed greens in a large bowl, drizzle with dressing, and toss gently to coat evenly.
  7. Arrange dressed greens on a serving platter. Tear burrata into chunks and scatter over the salad.
  8. Lay grilled peaches on top, followed by thin slices of prosciutto draped over everything.
  9. Drizzle 2 tablespoons of balsamic glaze over the salad, sprinkle torn fresh basil leaves, and season with additional salt and cracked black pepper if needed.
  10. Serve immediately while peaches are slightly warm and burrata is creamy.

Notes

Let burrata sit at room temperature for 15-20 minutes before assembling to enhance creaminess. Use ripe but firm peaches to avoid mushiness. Brush peaches with olive oil to prevent sticking and help caramelize sugars. Assemble salad just before serving to keep greens fresh. Balsamic glaze adds essential sweet-tangy flavor—don’t skip it.
