Flavorful Blackstone Hibachi Fried Rice Recipe with Creamy Yum Yum Sauce

A quick and easy hibachi-style fried rice made on a Blackstone griddle, paired with a creamy, tangy yum yum sauce that balances savory flavors with a silky richness.

  • 2 cups cooked jasmine rice (preferably day-old for better texture)
  • 2 tablespoons vegetable oil or avocado oil (for high heat cooking)
  • 1 cup diced onion
  • 1 cup finely chopped carrots
  • 1 cup frozen peas, thawed
  • 2 large eggs, lightly beaten
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and fresh black pepper to taste
  • For the Creamy Yum Yum Sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon sugar
  • 12 teaspoons water (to thin sauce as needed)
  • A pinch of cayenne pepper (optional)

Instructions

  1. Prep your ingredients: dice onions and carrots, mince garlic, thaw peas, beat eggs, and mix all yum yum sauce ingredients until smooth. Adjust thickness with water if needed and refrigerate.
  2. Preheat Blackstone griddle to medium-high heat (around 375°F). Add 1 tablespoon oil and let it shimmer.
  3. Sauté diced onions and carrots for about 3 minutes until softening and caramelizing. Add garlic and peas, cook for another 2 minutes until fragrant.
  4. Push veggies to one side, add oil if needed, pour in beaten eggs and scramble gently until just set but still moist. Mix eggs with veggies.
  5. Add cooked jasmine rice, break up clumps, spread evenly and let sit for 1-2 minutes to get a slight crisp. Drizzle soy sauce and sesame oil over rice, combine thoroughly. Season with salt and pepper and stir until heated through and slightly toasted.
  6. Remove from heat, transfer to plates, and drizzle creamy yum yum sauce on top or serve on the side. Garnish with sliced green onions if desired.

Notes

Use day-old rice for best texture. Add soy sauce after rice starts crisping to avoid steaming. Adjust yum yum sauce thickness with water. For vegan version, skip eggs and use vegan mayo and tamari instead of soy sauce. Avoid overcrowding the griddle for even cooking.
